Better Banana Pudding

Banana shortbread greek yogurt pudding

STEP 1: Shortbread cookie mixture

1 c. White Wheat flour

1/2 c chopped walnuts

1/4 c brown sugar

1/2 c melted butter

Bake at 350 degrees for 20 minutes stirring every 5 minutes until crumbly. Let cool

 

STEP 2: Filling

1 lg box sugar free vanilla instant pudding

1 individual container Dannon Oikos vanilla greek yogurt

8 oz Cool Whip (only use half)

3 c. miniature marshmallows

Unsweetened vanilla almond milk

 

Fix pudding as directed on box (swap almond milk instead of regular milk) . Add 1/2 container of cool whip, greek yogurt and marshmallows.

 

STEP 3:

Layer most of crumb mixture (save 1 cup)

Layer bananas on crumb mix

add filing

top with remaining crumbs

NOTE: let filing set several hours or marshmallows will be chewy
