Summer recipes, simple crowd pleasing snacks, and breakfasts that make it worth gettin’ up a little early!
Kraft SizzlinSalads Tuscan Chicken (Grilled boneless skinless chicken breast with Penne pasta and cranberry almond greens salad)
Multigrain pancakes made with Blue Diamond Unsweetened Vanilla Almond Breeze, blueberries & Dannon Oikos Vanilla Greek Yogurt. We also swapped blueberries for mini chocolate chips. These make great snacks/treats for kids as well!
I’m a snacker. Usually craving salt/crunchy. Baked Kale chips sprinkled with kosher salt and garlic powder or ‘kickin chickin’ seasoning are FANTASTIC!!!
Another Kraft SizzlinSalads chicken recipe! Grilled chicken breast in pesto sauce, layed on whole wheat flat bread topped with grilled portabello mushrooms, pico de gallo & avocado. The white sauce on the flatbread is a spinach dip from Publix (local grocery store).
Mid-day/Post workout snack! YUM!
Breakfast! Greenberry Shakeology w/Blue Diamond unsweetened vanilla almond breeze & Peanut Butter banana toast!
Oatmeal! Add in, cranberries, peppitas, almonds, walnuts, greek yogurt
Foil packets are awesome quick meal, quick clean up for summer. Baked Cod fish (or Tilapia) with black beans, corn, tomatoes
Fruit trays. The bright array of color and choice becomes an invitation to ‘taste test’. Greek vanilla yogurt as a fruit dip makes it fun for kids! Occasionally I’ll include pound cake !
Keeping the refrigerator stocked with color & options has made my kids WANT to try different fruits & veggies as their snack options. Clementines, Strawberries, blueberries, grapes and bananas have become favorites. I’m thinking their size and ‘pick-ability’ (yes that’s a word) make them novelty and fun!
Grilled veggie wraps! Any kind of wrap becomes a ‘fun’ food for kids. Turkey breast, cheese, raw spinach, cheese simple, quick and filling.
Summer Smoothie. Raw spinach, carrots, pineapple, blueberries, avocado & Bolthouse Farms vanilla chai protein! Cleansing, refreshing and invigorating. (KID FRIENDLY TOO)!
